An Aligoté with true soul, crafted by Naïma & David Didon high above Chassey-le-Camp in the northern CÎte Chalonnaise. This cuvée seamlessly combines limestone-driven tension with a refined, rounded undertone. It represents a pure, biodynamic expression of the Aligoté grape: pressed patiently, fermented naturally, and bottled with minimal intervention.
In the glass, the wine appears bright and mineral-focused, offering a delicate bouquet of white flowers, fresh citrus, and a wet-stone salinity. On the palate, it is lively and precise, featuring subtle salinity, balanced acidity, and a smooth mouthfeel. The finish is clean and focused, marked by fine bitter nuances and persistent chalky minerality.
The east-facing slopes above Chassey-le-Camp form a unique micro-terroir at the edge of the CÎte Chalonnaise. The combination of gentle morning sun and clay-limestone soils imparts a rare balance of fruit ripeness, mineral vitality, and crisp salinity to the Aligoté grape.
