A rare, crystalline, and remarkably refined micro-production from the hills surrounding Beaune. Domaine Dandelion stands as one of the most unique, passionate, and uncompromising boutique estates in Burgundy, where every task is performed strictly by hand — right down to the handcrafted paper labels embedded with real pressed flowers.
The Bourgogne Aligoté 2022 is born from a co-fermentation of two historic parcels with vines dating back to the 1940s. The result is a pure, chalk-driven, and slender white Burgundy showcasing a distinctly mineral and natural profile. In the glass, it opens with a cool, crushed-limestone character paired with delicate floral nuances. On the palate, it is focused, sleek, and multi-layered, centered on tension, energetic acidity, and natural balance. The finish is precise, bone-dry, saline, and impressively long.
The energy and poise of this Aligoté derive from the harmonious union of two contrasting terroirs. The Vigne de Crêt parcel, with its softer soil composition, provides vibrant, juicy fruit weight. Meanwhile, the steep limestone slope of Goutte d'Or yields small, concentrated berries brimming with intense saline minerality. Co-fermenting both plots from the start creates a balanced and complete wine.
Domaine Dandelion is operated by Morgane (a Burgundy native) and Christian (originally from Australia). Cultivating a tiny domain of roughly 2 hectares near Beaune, they produce micro-scale natural wines (around 5,000 bottles annually) of remarkable quality. Driven by a low-intervention philosophy, biodynamic practices, and artisan paper labels infused with real flowers, Morgane and Christian deliver true works of liquid art.
