Bourgogne Blanc, Ecume de Terre 2021, Domaine de la Luolle

Biodynamic white Burgundy wine from the Côte Chalonnaise. Treat this wine like a pre-2000 Chablis, if you will. A bone-dry but friendly style from the past that many look for but rarely find. The eventful 2021 year brings back these memories! Personally, I like to drink this wine with sushi and oysters.

The former “Daluz” cuvée is now called “Ecume de Terre” (literally “foam of the earth”) due to harvest complications/shortages, which forced several cuvées to be merged, resulting in a sensationally vibrant Chardonnay with characteristics from different vineyards. Soft, comfortable and fresh! The vines are 45 years old. Hand-picked in small crates. Cold fermented in large oak barrels of 228L and 400L for a subtle oak touch. Fresh lemon, floral notes, vanilla and white peach in the scent.

In the mouth: light texture, singing minerals, salty, crunchy, wet stone. Fresh lemon with a round vanilla cream note in the aftertaste.

Domaine de la Luolle is run by Olivier and Sandrine Dovergne. After a world sailing trip (called "Vents d'Anges"), Olivier and Sandrine decided to follow their passion and produce their own wines in Burgundy, at Domaine de la Luolle, located in the Côte Chalonnaise.
