The Story & The Terroir

Cendrillon—French for Cinderella—is a fairytale creation by Domaine de la Garrelière, but behind this poetic name lies pure, earthy craftsmanship. The foundation for this cuvée is formed by old vines, approximately 40 to 45 years of age. These deeply rooted vines are planted on a unique and vibrant terroir rich in sand, clay, and silex (flint). It is precisely this flint soil that imparts the wine's characteristic, razor-sharp minerality and tension.

For years, the estate has been managed according to the strict principles of organic (and biodynamic) agriculture. No chemicals are used, only respect for nature and soil life. This philosophy translates directly into the energy and purity found in the glass.

Tasting Note

Cendrillon is a layered, characterful white wine that never ceases to fascinate. On the nose, you immediately recognize the flint minerality, subtly embraced by aromas of ripe citrus, white flowers, a hint of green apple, and a soft, saline touch. On the palate, the wine reveals beautiful texture and depth—thanks to the old vines—perfectly balanced by lively, refreshing acidity. A wine with impressive structure and a pristine, lingering finish. This is truly a wine for enthusiasts seeking authenticity and excitement in their glass!

Vinification with Utmost Patience

The secret to this complexity lies in the cellar, where work is guided by incredible patience and minimal intervention. The harvest is carried out entirely by hand to ensure only the most perfect fruit is selected. The grapes then undergo an exceptionally slow pressing process lasting a full 3 hours, ensuring a gentle and optimal extraction of aromas.

After a natural settling (débourbage) of 12 hours, the cold, spontaneous fermentation begins. This fermentation relies entirely on the grapes' native, wild yeasts and lasts for a remarkable 2 months. Due to this slow, cool process, the wine preserves its aromatic refinement while building its unique, textured complexity.

Wine & Food Pairing

A fantastic gastronomic wine. Exquisite with refined fish dishes (such as grilled sea bass or cod with a beurre blanc sauce), shellfish, goat cheeses from the Loire Valley (such as Sainte-Maure de Touraine), or dishes featuring fennel and young spring vegetables.

Aging Potential: Beautifully vibrant right now, but possesses the structure to develop wonderfully over the next 3 to 5 years.
