This unique microclimate is the secret behind the wine's balance: the baking South-French sun ensures optimal ripeness and volume, while the cool sea breeze preserves the essential freshness and vibrant acidity in the grapes. To protect this pure fruit expression and aromatic intensity, the grapes are harvested in the early, cool morning hours. Following a temperature-controlled fermentation in stainless steel tanks, the wine is given ample time to develop extra texture, without heavy oak aging taking over.
