Intro – why this Aligoté stands out
Domaine Dandelion is one of those rare Burgundy gems where everything is done by hand – right down to the labels with real flowers. The 2022 Aligoté comes from two old plots with distinct character and delivers exactly that clean, mineral style that natural Burgundy lovers seek. Production is tiny; we received just a handful of bottles.

Tasting Notes

Nose & attack: refined and pure, with a cool impression of limestone. Style: Clean + Mineral.
Palate: lean, precise and elegant, focusing on balance and tension rather than width.
Finish: dry, focused and refreshingly persistent – a wine that calls for another sip.

Terroir & Vinification

Origin: near Beaune, Burgundy (FR). Grape: 100% Aligoté. ABV: 12%. Bottle: 750 ml.
Vineyards:
- Vigne de Crêt – approx. 0.25 ha, next to the house; planted in the 1940s; rich former garden soils; yields lively, healthy Aligoté.
- Goutte d’Or – steep 0.5 ha with very old vines; 1/3 Aligoté (planted 1944), the rest Pinot Noir & Gamay; minimal topsoil, straight on limestone. Aligoté struggles here, but gives small, yellow, speckled berries.
- Co-ferment of both sites: the energetic fruit from Crêt balances the nutrient-poor limestone plot – together this creates impeccable balance.
Vineyard work: organic & biodynamic; no chemicals – instead, vines are treated with raw milk. Everything is hand-done.
Cellar: hand-picked, directly basket-pressed; aged 18 months in 500L barrels; unfined, unfiltered, zero added SO₂; all transfers done by gravity.

Food Pairing

Pure & mineral → oysters, shellfish, sashimi, chèvre, tempura vegetables.
Lean & fresh → fennel & citrus salad, pan-fried trout, leek quiche.
Serving tip: 9–10 °C in a medium-sized white wine glass; give it a few minutes of air.

Morgane & Christian work biodynamically near Beaune, crafting uncompromising low-intervention wines. Christian (Australia) and Morgane (Burgundy-born) met in Beaune and now run a micro-domaine known for delicate, refined wines with zero additions. Even the labels are handmade in an old paper mill and decorated with real pressed flowers.
