Even if you have only been to South Burgundy once, there is a good chance that you have eaten at La Courtille de Solutré, where the wines of Pascal Rollet and his Domaine de la Chapelle are invariably the most sought-after wines on the wine list. are.
Pascal, often wearing a cowboy hat, has always remained very ordinary despite his fame and is never afraid to let us taste something when he is not working in the vineyards. But he prefers to stand among his grapes all day long. The best calling card of the Sud-Bourgogne is their Pouilly-Fuissé cuvee called AX-B with its characteristic southern Chardonnay hips and endless amounts of sun rays in the glass. AX-B is an acronym for Aux Bouthieres. That is their 1er Cru vineyard. However, this plot is exactly an extension of the Aux Bouthieres vineyard, but more like an extension of the same terroir, which has not yet been certified. Technically not yet a 1er Cru, although it will certainly become one. But for the time being we do not have to pay for this future certification.
