Ratafia is slightly sweet and elegantly fruity, but has acquired a beautiful complexity due to the special maturation in oak barrels. Unlike sparkling champagne, ratafia is a softly sweet, fortified wine without bubbles. The name is derived from the Latin phrase "Res Rata fiat," which means "The matter is settled." Ratafia is made from Champagne must and the addition of brandy. Matured in oak barrels.
The intense nose opens with aromas of orange blossom, fig and honey.
The mouthfeel has a good balance between richness, freshness and alcohol. Flavors focus on dried fruit and gingerbread with a nice creaminess.
Champagne Pierre MALINGRE is located in the small village of Prouilly, in the heart of the Massif de St Thierry. Their vineyard covers 9 hectares, spread over approximately 30 plots in the villages of Prouilly, Trigny, Gueux and Janvry. The oldest vines were planted in 1973. They grow the three traditional Champagne grape varieties: Chardonnay, Meunier and Pinot Noir. The vines are grown with respect for tradition, terroir and environment. In 2023 they achieved certification for sustainable viticulture in Champagne. They recognize the need to protect their vineyard and heritage and are taking action to make this happen. They have not used insecticides for more than 20 years, resulting in very pure Champagnes that beautifully express the unique character of their terroir.
